Nutella hardens because its main fat, palm oil, solidifies at cool room temperatures, unlike butter, causing the emulsion of oils, sugar, and hazelnuts to become stiff, especially when refrigerated or stored in cold conditions. Proper storage is at room temperature (around 18-24°C or 64-75°F), as cold temperatures make it unspreadable, but a quick warm-up or stir can restore its creamy texture.
All you need is hot water and Nutella. If your Nutella is in a glass jar, place it in a deep bowl and cover it with hot water. If it's in a plastic container, transfer it to a glass bowl first, then follow the same steps. Stir constantly until you achieve that silky, flowing consistency.

Fixing Seized Chocolate
It may seem counterintuitive, but to fix seized chocolate, add 1 teaspoon of boiling water at a time and mix vigorously until it becomes smooth again. This method is ideal when you plan to use the chocolate for a drizzle or sauce, since the chocolate will be somewhat diluted.
Add the melted chocolate and blend well. The Nutella will be pretty thin, but it will harden over time at room temp. Before you eat it, heat in bursts and stir to make dip-able again. It will keep for a few weeks at room temp—longer in the fridge.
