That white, jelly-like substance seen during slug mating is actually their entwined, everted penises (reproductive organs) exchanging sperm packets (spermatophores) as they hang from a mucus rope, a key part of their hermaphroditic reproductive process where both slugs can become fertile.
The white powder might just be residue from their natural environment or even a harmless aspect of their own body chemistry.
Food preparation prior to cooking can leave debris from which infection can also occur. It may be possible to become infected by consuming snail/slug slime (mucus) on produce or by transferring mucus from hands to mouth after handling snails/slugs.
