Perhaps the most famous Wookiee Jedi in Star Wars Legends, Lowbacca (or “Lowie”) was Chewbacca's nephew and was born the same year as the events of Return of the Jedi. Lowbacca's first appearance was in Young Jedi Knights: Heirs of the Force by Kevin J. Anderson and Rebecca Moesta.
While Gungi is certainly the most well-known Wookiee Jedi because of his appearances in both The Bad Batch and 2008's Star Wars the Clone Wars, there are still a plethora of other amazing Wookiee Jedis who have come before him.

Sharad Hett was a famous Jedi Master who exiled himself on Tatooine. He became disillusioned with his life as a Jedi after the loss of his family. Sharad Hett embraced the culture of the Tusken Raiders.
In the current continuity, there has never been a droid who can use the force. However, there are a few close calls and one proper example that has been rendered non-canon. Most notably, a 1999 comic book introduced a character named Skippy the Jedi Droid.
While there was one famous Jedi Ewok in the now non-canon Star Wars: Legends stories, a dark side-wielding equivalent has never been revealed.
