Neither grilling nor pan-frying is definitively "better"—both high-heat methods create delicious lamb chops, but grilling imparts smoky flavor while pan-frying offers superior crust control, with the best method often being a combination of pan-searing and oven-roasting for a perfect balance of crispy exterior and tender, juicy interior. Choose grilling for outdoor flavor and char, or pan-frying/searing (often finished in the oven) for a consistent, restaurant-quality crust, especially with thicker chops.
Is it better to grill or fry lamb chops? Grilling lamb chops can impart a smoky flavor and create a desirable charred exterior, making it a healthier option as fat drips away from the meat. Frying, especially pan-frying, offers more control over cooking, enriches flavor with fats, and is convenient for indoor cooking.
Ingredients
Cooking times change depending on whether you want your lamb steak medium or well-done, but both pan-frying and grilling deliver juicy, succulent lamb steak.
Clean and oil grilling grate. Rub lamb chops with olive oil, season with black pepper, and place on cool side of grill. Cover grill and let cook until an instant-read thermometer inserted into the thickest part registers 110°F (43°C) for rare or 120°F (49°C) for medium-rare.
How to make Pan-Fried Lamb Chops. Combine marinade ingredients (garlic, rosemary, olive oil, and salt) in a small bowl. Spoon marinade evenly over both sides of lamb loin chops. Pan-fry lamb chops in a hot, cast iron skillet over medium-high heat to your desired doneness, 2-4 minutes per side.
Lamb chops and steaks, as with beef steaks, should be cooked over a high heat, quickly, and can be quick-roasted, too, depending on how thick they are.
Air fryers ensure that heat is evenly distributed, resulting in perfectly cooked lamb chops every time. Whether you like your lamb rare, medium-rare, or well-done, an air fryer can achieve your preferred doneness with minimal effort.
Marinate the lamb chops in a mixture of herbs, garlic, olive oil, salt and pepper. Sear the chops on high heat on the stovetop until browned on both sides. If you have thick double-rib chops and you would like them more well done, cover the pan, lower the heat to warm, or put them in the oven for a few minutes.
Overcooking is a common mistake, and it's the number one reason lamb chops become tough. Wrong Heat: Cooking at too high a heat can quickly toughen the meat. It's essential to control the heat, especially when grilling or pan-searing. Lack of Marination: Marinating lamb chops breaks down tough fibres and adds flavour.
Place the lamb chops on the grill and cook for about 4-5 minutes per side for medium-rare, or 6-7 minutes per side for medium. Adjust the cooking time based on your preferred doneness. Use a meat thermometer to check the internal temperature: 125°F (52°C) for medium-rare, 135°F (57°C) for medium.
It's no secret that fried food absorbs a ton of fat - making it extremely bad for your heart. On the other hand, grilling ensures most of the fat drips off, thereby reducing the fat content.
According to Wissam Baki, Executive Chef at Miami's vibrant Lebanese hotspot AMAL, our bad decisions go like this: "Oven temperature too hot, under seasoning, and not letting the meat rest are the most common mistakes when it comes to cooking lamb chops."
We know cooking lamb chops in the oven can be a little tricky sometimes! The best types of lamb chops to cook in the oven are lamb rib chops and lamb loin chops. Fully trimmed 'Lollipop' style lamb chops are not preferred when using an oven as a lot of the fat is trimmed off so these taste best when pan-fried.

Cumin: This herb's warm, earthy tones provide a pungent, aromatic boost to dishes. Coriander: Coriander gives an earthy and citrussy boost to lamb, typically in marinades as well as in curries and stews. Marjoram: A more delicate alternative to oregano, marjoram's aromatic and slightly sweet notes pairs well with lamb.

If they are not sizzling, then your pan is not hot enough. Set the timer to 3 ½ minutes to 4 minutes. When the timer goes off, flip the lamb chops, using a pair of tongs. Continuing cooking on the flip side for another 3 ½ to 4 minutes.
Lamb chops need about 10 minutes of cook time.
This applies for stove top cooking and grilling. You are aiming for an internal temperature of 125ºF for medium doneness or 145ºF for medium-well doneness. This will take about 2 1/2 minutes per side, 6 to 8 minutes total for rib chops, or 10 minutes total for loin chops.

Place chops on platter, cover and let rest at room temperature. Turn grill burners on medium-high heat and preheat to 400 F. Place chops on grill and cook for 3 to 5 minutes per side, or until desired doneness minus 5 degrees. (See doneness guide above).
Spray the barbecue grill or grill pan with cooking oil to stop the pork from sticking. Cook the chops for roughly 4 minutes on each side on the hottest, middle part of the grill, turning them when they have become charred on each side.
