To delete all messages from someone, you typically long-press their conversation in your messaging app to select it, then tap the trash can icon to delete the entire thread, a process which works similarly on both Android (Google Messages) and iPhone, though iPhone also offers a "Recently Deleted" folder for recovery within 30 days.
In the Mail app, tap on a message that you want to delete. All of your messages in that category from this sender will appear in a message list. Tap the More button. Tap Trash All.

If you are using Google Messages, deleting a message you have sent does not delete it for the recipient of the message.

To permanently delete iPhone text messages, first delete them from the Messages app, then remove them from 'Recently Deleted' in the Messages settings. If you delete a message someone sent you, then it only disappears for you, and they wont know you deleted. They will still be able to see it on their side though.
