There's no single "Stealth Mode" on iPhone, but you can achieve similar effects with Private Browsing in Safari, enabling Silent Mode for no sound, or using Airplane Mode to disconnect from networks. For a more advanced "screen-off" recording, you can set up an Accessibility Shortcut with VoiceOver to turn off the screen while recording video.

When Silent mode is on, iPhone doesn't ring or play alerts or other sound effects (but iPhone may still vibrate). When Silent mode is off, iPhone plays all sounds. On models with an Action button: Go to Settings > Sounds & Haptics, then turn Silent mode on or off.
Use the Action button
For many functions, the Action button can be used to turn a setting on or off. For example, if the selected action is Silent Mode (the default), you can press and hold the Action button to put iPhone in Silent mode . If you press and hold the Action button again, it turns off Silent mode.
If you're concerned about security, you can use stealth mode to make it more difficult for hackers and malware to find your Mac. When stealth mode is on, your Mac doesn't respond to either “ping” requests or connection attempts from a closed TCP or UDP network.

How to turn on Private Browsing
If you want to mute notifications, calls and texts, but still see them rolling in, turning on Silent mode is probably your best bet. But if you want to fully block all pings and stop your phone's screen from lighting up for a while, then you'll want to opt for Do Not Disturb.
Find the Action Button – It's on the left side of your phone. Check for the orange line – If you see it, Silent Mode is on.
