To a point yes. Adding more yeast should ferment faster. The risk is not so much off flavors but a lack of fermentation flavors - esters, etc. You might be able to pick a yeast that finished faster.
A little sugar, up to three percent, speeds up fermentation. The yeast processes the added sugar first, saving the time it would take to break down starch into sugar. With over three percent sugar, however, the fermentation rate no longer increases. [1] Above six percent, sugar actually decreases the rate.

If we add an excessive number of yeast, the fermentation process will be robust and energetic, and this may result in an excessively active fermentation. It is possible for this to result in blocked airlocks, blow-offs, bursting bottles, or a fermenter that has ruptured.
The only possible time you would want to add sugar fermentation is if you intend to make a high-alcohol wine. In this case you would want to start out the fermentation with enough sugar to reach 13% or 14% alcohol.
