The primary religious group that strictly abstains from all meat (and often eggs, honey, and root vegetables) due to its core principle of non-violence (ahimsa) is Jainism, with strong vegetarian traditions also found in Hinduism (especially certain sects, avoiding beef) and Mahayana Buddhism (encouraged for compassion). Other faiths with vegetarian members or specific meat restrictions include Seventh-day Adventists, Rastafarians, and certain mystical traditions like Hare Krishnas.
These include religions that originated in India, such as Hinduism, Jainism, Buddhism, Taoism and Sikhism. With close to 85% of India's billion-plus population practicing these religions, India remains the country with the highest number of vegetarians in the world.
Catholics abstain from flesh meat on days of penance, such as Ash Wednesday, Good Friday, and the Fridays of Lent.

Jains don't eat root vegetables. Harvesting one means killing the whole plant. What's more, potato bulbs can grow into a new plant so eating one prevents a potential life. It's the same logic behind why some Jains won't eat eggs.
