The best roast comes from a well-marbled cut like Ribeye or Sirloin, cooked with a high initial sear for crust then lower heat for tenderness, ensuring it rests well and isn't overcooked to achieve a juicy, flavorful, perfectly pink center with caramelized exterior, enhanced by aromatic vegetables and a rich gravy.
Prime Rib Roast
Roasted whole on the rack, prime rib is a popular choice when it comes to Sunday roast. It is well marbled and full of flavour and tenderness. While many beef roasts do not need to be trussed or netted, this cut will benefit from it.

Choosing the Best Cut for Roast Beef
If you're looking for a tender cut for a special occasion or to serve to guests, go for a more expensive cut: Prime rib. Ribeye. Beef tenderloin.
Beef that appears grayish brown is older and may have been sitting on the shelf too long. There should be bright, white marbling of fat throughout the meat. If you buy a bone-in roast, the bone should also appear bright white. A good cut of roast should also be dry to the touch and sweet smelling.
An eye of round can be tender yes. But fall apart I have my doubts, it's so lean that it does not lend itself to that. A Chuck roast will fall apart. Really an eye of round is better to cook and slice thin or it is awesome for jerky.
I love using fresh thyme, sage, oregano and parsley. Or use a premade herb blend such as Herbs de Provence. Score the beef and add whole peeled garlic cloves. This adds a beautiful flavor and aroma to your roast.
To cook it until it's so tender it falls apart, you'll need to choose a joint like chuck and blade or beef brisket and either braise, slow roast or slow cook it for at least a couple of hours.
Dry brining with baking soda is an ideal route for making slabs of ribs or roasts because it isn't time-sensitive! With this method, you can tenderize your cuts of meat with baking soda in the morning and have them ready to cook in for your afternoon barbecue or an appetizing feast at dinner.
A mistake everyone makes with pot roast is letting it get too dry, which can lead to a rather unpleasant bite. "If your meat is still tough afterwards or you overcooked it, try adding more liquid (broth), cover and steam at low heat to tenderize the meat," Simmons told Food Republic.
Salt is essential in creating a fantastic steak. Salting steak before cooking it won't make it taste salty. Instead, salt pulls moisture from the meat, concentrating the beefy flavors. I recommend seasoning steak with kosher salt (not table salt) at least 45 minutes before cooking.
Beef chuck roast: The chuck roast is one of the 3 best cuts of beef for pot roast. It has tons of flavor, but the cut can be pretty tough, so it works well for a long, slow braise in a flavorful sauce. I prefer a roast that doesn't have too much surface fat, but you can always trim off that fat yourself before cooking.
Tip #2: Tenderize with salt!
This can be done with salt / seasoning applied to your steaks prior to cooking, then allowed to set for ~ 40 minutes to 1 hour at room temp. This draws out moisture which will be reabsorbed producing not only amazing flavor, but a more tender cut of meat.
How long to cook roast beef. Roast beef cooking time: 50 minutes to 1 hour 20, depending on how well done you like it. Roast beef temperature: Heat the oven to 240C/220C fan/gas 9 for the first 20 minutes of cooking, then lower it to 190C/170C fan/gas 5 for the remainder.
Brisket Roast
Brisket comes from the chest, or pectoral muscles of a cow, which are rich in collagen and connective tissue. As such, these muscles are naturally very tough, and need to be slow cooked. Brisket, much like chuck roast, makes a great pot roast, and can be roasted in the oven as well.
To prevent a dry pot roast in the future, make sure you've got enough liquid in the pot, and don't overcook it. If your piece of beef weighs less than three pounds, check it after a couple of hours. If it's bigger, then see if it's done in three hours.
Best Overall: OXO Good Grips Die Cast Meat Tenderizer
It's lightweight and has a comfortable, oval-shaped handle that's easy to grip and won't slip. The pyramidal teeth proved to be particularly useful at tenderizing the pork, and the marinade was able to penetrate, allowing delicious flavor inside deeply.
What to do while cooking a beef roast. You should cover your beef with foil for at least part of the cooking time. This stops it from drying out too much during cooking. While it's cooking you can start to make your side dishes, for example, traditional Yorkshire puddings.
Mistake: Failing to season the meat
Seasoning is crucial for any dish, and with roast beef, many chefs say it should be the first thing you do. Michael Handal, a chef at the Institute of Culinary Education, tells Chowhound that he thinks the most overlooked step is dry brining the beef before roasting.
dry and tough, yeah? All of the heat is simply tightening the connective tissue while the internal temp is slowly rising. It will take 6, 7, 8, 9, 10 hours (depending on size of the roast and your slow cooker) for the roast to get to a temperature that those connective tissues start breaking down.
Roast beef cooking time depends on weight and desired doneness, but generally allow 15-20 mins per 500g for rare, 20-25 mins for medium, and 25-30 mins for well-done, often starting with a high heat sear and then lowering it, or using a meat thermometer for accuracy. Always factor in at least 20 minutes of resting time for juices to redistribute.
Thyme. Known for its lemony notes, thyme is used to balance out strong beefy flavors with a refreshing, light taste. It brings a little zest to beef, especially in summer dishes.
Pot Roast Seasoning Ingredients
7When the bottom of the pan is sufficiently deglazed, place the roast back into the pan and add enough of the beef stock to cover the meat halfway. Add in the onion, carrots, rosemary sprigs, and thyme sprigs. Add tomato paste if using (it makes the liquid a little richer.)
