If Nezuko tasted human blood, she would likely lose the last vestiges of her humanity, succumb to demonic urges, become significantly stronger by feeding, and potentially regain her speech and intelligence, but become an uncontrollable, bloodthirsty demon, which is why she wears the muzzle to prevent it, as she's unique for surviving without it.

Abnormal Demon Physiology: Nezuko has several unique traits that set her apart from all other demons. Most notably, Nezuko can continuously restore her power without consuming any human blood, like any other demon would need to do.
After she transformed, she was so hungry and had no control when she attacked her own brother in an attempt to eat him. However, she was subdued before ever tasting human blood. I think never tasting human blood is why she kept her humanity and as soon as she has blood, she'll become full demon.

As an Oiran, Daki was very mean and cruel. She yelled at any servant or helper in the Kyogoku House and got angry with anyone who touched her or got in her way. She also liked to eat only people she thought were pretty or strong.
One of the most emotional and saddest backstories of all is that of Gyomei Himejima, the Stone Hashira. He's not just the most powerful fighter in the Demon Slayer Corps. He's a person who had everything taken from him, long before he wielded a katana.
