Choosing the Right Size Cake Pan
I'm partial to working with 8-inch cakes because the layers are taller and I find them easier to handle than 9- or 10-inch cakes. Most of the cakes on this blog are 2-3 layers, made with 8-inch pans (unless I'm making a 6-inch Mini Chocolate Layer Cake).
Standard cakes
Most cakes are usually 2 layers of cake with a cake board on the bottom. The layers can each be 2 inches or 3 inches tall. So there can be two layers making one 4 to 6 inches tall cake. These do not need any additional support as long as they are on a good cake circle/board.
