How to prepare beetroot. To cook whole, wash but don't peel, then cut the stalks to 2.5cm and leave the root at the bottom; if either are trimmed too much, the beetroot's colour will bleed. Bake in a low oven for 2-3 hrs, either wrapped in foil or in a little water in a lidded casserole dish.

Earthy flavours go very well with vinegary flavours. It's a win-win all around.

Walnuts: The crunchy texture and nutty flavour of walnuts complement the earthy taste of beetroot. Feta cheese: The tangy and salty flavour of feta cheese pairs well with the sweetness of beetroot.

Beets can be a divisive vegetable — people tend to love or hate them — but they don't often cause stomach cramps. Rather, pain after eating beets may be due to a food intolerance, allergy, or an overabundance of fiber.

His way, the roasting condenses the beets' sweetness while a layer of steam inside the packet keeps them moist. The technique's as easy as can be.
