To play YouTube while using other apps, enable Picture-in-Picture (PiP) in your phone's system and YouTube app settings, then start a video and swipe home to make it float in a resizable window; YouTube Premium unlocks PiP for all content, while non-Premium users (in the US) get it for most non-music videos, but outside the US, Premium is needed for all videos. Alternatively, for audio-only, use YouTube Premium's background play or try a browser trick with desktop mode or a PiP browser extension on desktop.
Steps:
Select a video and start playing. Press the home button (of course, the YouTube app will close/minimize). With headphones plugged in, stay on the home screen, and press the play/pause button on the headphone itself. Works for me every time, but only for playing from the browser not from the YouTube app.
