I would check your water parameters; sometimes if they are consistently climbing out of the tank, there is a problem with water quality. I would also not fill the tank all the way; leave about an inch or so gap at the top.
Snails are extremely simple creatures so as long as they not hiding in their shells and eating, that should be enough to tell if they are healthy or not. Also, if their shell is cracked or melting, it's a sign of calcium deficiency so look out for that too.
A stressed snail stays sealed for days and might smell bad when you gently sniff near the shell opening. Don't panic if your snail hasn't moved all day. Just give it time and check again in a few hours.

If snails go up to the top occassionally and then continue moving later thats regular; if they are all at the top continually then something is wrong with the water, probably oxygen or ammonia or nitrites. Or idd perhaps if there is 0 food for them but that is easily tested/fixed.
If the snail is standing still, you can try to gently move it (placing your fingers only on the base of the shell, not the body). If you attempt this, it's very important that you DO NOT try to pick them up vertically!

The harm of a snail.
