Nick served Gilead initially out of necessity, joining the Sons of Jacob for a job, then rising to become a trusted driver for the Waterfords and a strategic military leader in the Crusades, even becoming a high-ranking Eye (spy) to secretly undermine corrupt Commanders like Guthrie, all while his complex loyalties evolved, eventually placing him in conflict with Gilead's regime as he prioritized June and his family's safety, leading him to betray Gilead from within.
Nick stayed in Gilead because that was his purpose — to help destroy it from within.

He was ok with breaking the rules for June because he loved her and it benifited him but he was always complicit in the oppression of others from the beggining. Nick knew what was to come before almost anybody, if he had wanted to escape gilead he could have but he chose to stay because he was a “somebody” there.
Marthas tend to be infertile unmarried women who haven't broken laws. We're starting to get more info on how Marthas are selected in season three. Econowives are regular married women who have not broken any laws that would place them as handmaids (should they be fertile).

Marthas wear green and are the domestic servants of the house. Green is often associated with health and cleanliness. So green may represent their domestic duties in looking after the wellbeing of the handmaid in their charge.
