It is not fair on Lux or his actual love interest to ship him and Ahsoka when Rex and Ahsoka clearly have a great, healthy relationship already. And in the Clone Wars novels it is obvious that Rex and Ahsoka have feelings for each other.
In the novel Ahsoka, Ahsoka meets a female farmer named Kaeden Larte. Kaeden helped Ahsoka adjust to life but at the time, she only knew her as "Ashla." She helped Ahsoka find a place to call her own and helped build a reputation. Throughout the course of the novel, Kaeden developed romantic feelings for her.
After surviving Order 66 and fashioning graves for the fallen clones, which included leaving behind her lightsaber, Ahsoka parted ways with Rex, took on the name Ashla, and settled on the Outer Rim planet of Thabeska for close to a year, befriending the locals but fleeing once the Empire arrived.
Mildly Interesting: Ahsoka is 5 years older than Captain Rex and most of the clones. I've always known that the clones age at an accelerated rate and that even though they have the bodies and minds of an adult, their actual chronological age during The Clone Wars is actually pretty low for human standards.
Ahsoka Tano was born in 36 BBY, making her about 14 when she first debuts in The Clone Wars theatrical movie. Applying that math to the time period of The Mandalorian, Ahsoka is 45 years old in her Mandalorian debut.

They eventually developed a close bond with each other, similar to a child and parent or even a big brother and little sister. After Anakin was severely injured during a mission to save Aayla Secura, Ahsoka was deeply concerned for her master, not wanting to leave his side until he was better.
Did Anakin care for Ahsoka as much as he cared for Padmé? In my opinion, I think it's hard to compare Anakin's relationship with Padmé to his relationship with Ahsoka because the nature of the relationships are different: Anakin romantically loved Padmé, meanwhile he loved Ahsoka unconditionally like a sister/daughter.
The most obvious reason is that “Sir” is a term of respect among the clones, regardless of gender.
As a citizen, she was called “ma'am” because it just made more sense. Essentially, Ahsoka is Lady Tano now, hence why Rex called her “ma'am.”
Its influence on his mind is unbreakable, but his attempt to resist it is a result of his awareness. Rex understood what the chips were capable of, so he fought a mental battle over his thought process. Thankfully for him, Ahsoka removed his chip before he could harm or even kill her.
