When she took the cure for vampirism it took away the compulsion that Rick had done to her to forget the memories in the first place! Elena takes the cure for vampires, becomes Human and gets her memories of Damon back in Season 6 Episode 20.

As for Elena, Kai didn't do the obvious and kill her. Instead, he put her in a sleeping spell that linked her body to Bonnie's. The specifics of the spell meant that as long as Bonnie (Kat Graham) lived, Elena would never age and would be stuck in a slumber.
In the end, Bonnie suggests that Enzo take the cure and Sybil, chained up by Damon, uses her powers to return Damon's humanity to him, flooding him with guilt from his recent actions under the siren's control.
