Some dogs will know their time is approaching and will look to their people for comfort. Saying goodbye to your dog with love and grace means staying with your dog during these final hours, and reassuring them with gentle stroking and a soft voice. Take time off work, or from whatever else is going on.
Several dog owners report their dogs becoming more affectionate and clingy when they are close to dying. This need for attention can be due to them feeling more vulnerable and in need of more attention. Our sweet Rottweiler, who was diagnosed with cancer in her old age, wanted to be pet until her last moment.
Lethargy and Fatigue
As your dog nears the end of his life, he will sleep more and more and will tire more easily. He may also opt to stay home on his dog bed instead of going on walks and outings like he used to.
Your dog will hardly know what happened and will simply start to feel pleasantly drowsy. You will notice that I said “Your vet will hopefully prepare an anaesthetic or sedative injection for your dog”. Some do not. Having seen it done both ways, the “two injection” method is definitely my preference.

For dogs without separation anxiety, petting dogs goodbye might actually keep them calmer while you're away. I searched and found two studies that could shed a bit more light on the effects of enthusiastic goodbyes. The first was conducted by a group of researchers from the University of Pisa in 2018.
Sodium pentobarbital triggers unconsciousness for euthanizing animals. There's no pain while your dog is unconscious, so it won't feel the moment its body organs stop functioning. Using a syringe to inject the drug directly into the vein may risk leaking into the surrounding tissue, which may cause a mild sting.
If the euthanasia solution is accidentally given outside the vein, it could cause a burning sensation. If the dog moves (but not necessarily has to) and soon there's a hole in the vein or the catheter comes out of the vein, the Solution can leak outside the vein into the tissue. This being my cause, the dog to cry out.

Signs a dog is actively dying include labored breathing, an inability to control their bowels or bladder, a refusal to eat, and a lack of reaction to stimuli. The body language that your dog uses when you kiss them will be an indicator that they know it is a sign of affection. Of course, dogs don't know what kisses actually are, but they learn to realize that they are good.

Pain and Mobility
Signs of pain in dogs tend to be very subtle. It usually starts as reluctance to do what they have done easily in the past, like jumping up on furniture or in the car, that then progresses to inability to do these things at all. Walks become shorter, or their gait changes during the walks.
Your vet will always make sure your pet isn't scared, nervous, or unsettled during euthanasia by using as much sedative medication as is necessary to help them relax. Euthanasia is as humane as any medical procedure available to pets today.

The euthanasia process itself does not hurt, but is similar to going under anesthesia, so your pet may feel odd as they lose consciousness, leading to odd noises or movements.

Don't say “Now you can get a new pet!” Any version of “When are you getting a new puppy?” or “Let's get you another kitten” is in very poor taste (and timing). Grief is normal and needs to happen before people can heal enough to invest their time, love and energy into another pet.
