Lynel Guts drop from four types of Lynel creatures, including: Ordinary Red-Maned Lynel. Blue-Maned Lynel. White-Maned Lynel.
It is worth noting that you do not need to worry about the chance of getting Lynel Guts. Defeating Blue-Maned or White-Maned Lynels will give you Lynel Guts a 100% chance. Also, you can challenge these enemies after a while and get as many Lynel Guts as you need.

Are Lynels harder than divine beasts? Lynel become easier with technique, hearts and armor and the divine beasts were designed to beat before you go exploring too much and fight lynels. In my opinion getting the rewards from divine beasts helps you combat lynels more effectively.

Every kind of Lynel from red to golden are completely immune to all elemental types. That includes the additional damage and the effect an element would normally inflict. It is therefore pointless to use offensives like elemental arrows and elemental melee weapons whilst fighting them.
Golden Lynels are found only in Master Mode, part of The Master Trials DLC. These are the strongest of the lot and will take some besting.
