Hela could likely defeat Thanos without Infinity Stones due to her superior speed, skill, healing, and potent bladed attacks that can pierce him, especially if the fight occurs on or near Asgard where her power is amplified. However, Thanos with the Infinity Gauntlet, particularly the Power Stone, would have a significant advantage, potentially overpowering her through brute force, energy blasts, or even destroying Asgard to negate her power source, making it a much closer or potentially losing fight for Hela.

The reason it can't be lifted is because of the magical enchantment placed on it by Odin. The hammer has a spell that only allows those who are worthy to lift it. That means no matter how strong or angry Hulk gets, he should never be able to lift Thor's hammer unless he is considered worthy.
The theory that Thanos was waiting for Odin to die is incorrect. Thanos was waiting till he knew where all of the stones were. Once he captured Nebula and found out that Gamora knew the location of the Soul Stone, he went on his offensive against the Universe.
