If you've blocked someone or they've blocked you, you won't see their profile. If you have additional Facebook profiles you'll need to manage blocking from each of your profiles separately.
While people don't get any notification when someone restricts them, they can sense it by looking at your profile, as they won't be able to find any of your Private posts. This absence of private (i.e., friends only) posts and other indicators can help them guess that you've restricted them.
It could be that the; ones that do not show as friends, might have their setting set to private including their friends list even if you are friends with them. So then even if you're already friends it's not going to show friend underneath when you see them.

Hide post: Hides a single post. Snooze [Name] for 30 days: Temporarily hides all posts from a specific person, Page or group from your Feed. You'll continue to be friends with or follow the person, Page or group. Unfollow [Name]: Hides all posts from a specific person, Page or group from your Feed.
When you block someone, stories also become hidden. So you cannot view each other's stories just like posts. On the other hand, the people on the Restricted list cannot see your stories, but you can see their stories.
The length of a temporary block by Facebook depends on the severity of the violation and the user's history on Facebook. It has been observed that a temporary block may last as little as a few hours, but could also last up to 30 days. There is currently no way to view the duration of the block.
Restricting a user on Instagram is similar to blocking them—but a little more polite. Whereas blocking a user hides your entire feed and stories from them, the restrict feature simply hides their comments and messages from you while still allowing them to view your posts.
In the Facebook iOS/Android app: Go to Menu > Settings & Privacy > Settings > Active Status and toggle off Show when you're active.
Also, if the person's full list of friends is hidden to you, a mutual friend who also has their full list of friends hidden to you will not be displayed as a mutual friend. In other words, if a mutual friend's friend list is hidden, it will not be show up.
