Ymir Fritz chose Eren because he represented the freedom she craved, acting on his own will to destroy the world and offering her a path to break free from her 2,000-year bondage to King Fritz, a cycle of subservience and love that mirrored her own tragic story, and by enabling Eren's Rumbling, she finally found a way to liberate herself and end the Titans' legacy.
Most likely, she is motivated by the same thing Eren is, freedom , and sees the Rumbling as a means to achieve that freedom. It's more of a mutual relationship between them than anything else. As noted by Eren, she reached out to him first, and Eren made the choice to respond.
So it was some sort of wish-fulfilment and trauma bonding between two heavily damaged and traumatised individuals. Eren promised Ymir the idea of breaking free of her chains, and Ymir gave the power to Eren to achieve his own idea of freedom.

Eren's true love, widely considered by fans and supported by the creator, is Mikasa Ackerman, though their relationship is portrayed as tragic and complex, evolving from a sibling-like bond to deep, albeit complicated, romantic love that he struggles to acknowledge due to his grand, world-altering plans. He confesses his feelings in the end, but it's within a tragic context, acknowledging he couldn't bear seeing her with anyone else and seeing a future where they lived happily in an alternate reality.
It is said that nobody could surpass Ymir, and that because Ymir died 13 years after awakening her powers, no one was allowed to live beyond that; this phenomenon was known as the "Curse of Ymir."

After being a slave for two thousand years, Ymir Fritz found her savior and got her freedom at the end of Attack on Titan. She finally let go of King Fritz, choosing to love herself before loving anyone else - something Mikasa Ackerman showed her how to do.
