Jedi are not a species but members of a diverse, galaxy-wide order, drawn from countless different species, though Humans, Twi'leks, and Yoda's mysterious green-skinned race (whose name remains unknown) are notable examples, with the Jedi Order itself being a philosophical and spiritual group rather than a biological lineage.
