When baked, overproofed sourdough looks flat or pancake-like, has a dull crust, a dense and gummy interior, lacks a significant "ear," and the scoring often spreads out instead of holding its shape, because the gluten network has weakened too much and collapsed, leading to poor oven spring and texture.
If your dough is overproofed, it turns wet and sticky and unworkable. You can test if it's overproofed by sprinkling a bit of flour on the surface, then poking a finger about 1 inch deep, and observe how the dough behaves. If it doesn't spring back at all, it is overproofed.
Under and over-proofing results in dense, flat, unattractive loaves. But similar to scrambled eggs, there is point where they are just perfect, and you can learn the skill to repeat that every time. What's the difference between an overproofed loaf and a well proofed loaf of sourdough? Overproofed loaves typically feel very sticky, they don't want to maintain their shape, and when baked can come out looking very flat. If they are WAY overproofed they will also have a very gummy interior.
It will be sticky and hard to shape (even soupy if you let it go too far) and the loaf will not spring in the oven. One helpful way to understand this is to think about what happens with your starter— that is essentially the same process that is happening with your dough just on a larger scale.
Over-proofed dough will not spring back at all when poked. Too much air makes the dough structure very fragile, and it will hold a deep fingerprint. Over-proofed dough will also feel extremely aerated, and will likely start to deflate slightly when touched.
This is the second proofing stage which can take anywhere between 12-48 hours. The longer you proof the dough, the more acidic it will become, and the more the gluten will be broken down.
The biggest mistake beginners make with sourdough is impatience, specifically baking with a starter that isn't strong enough or rushing fermentation, leading to flat, dense bread; they often try to bake too soon, don't let dough proof long enough, and fail to develop dough strength or learn to "read the dough" (look/feel) rather than just the clock, plus starting with overly high hydration is a common pitfall.
To prevent over-proofing, monitor the dough closely during fermentation. Factors such as ambient temperature and the activity of your sourdough starter can affect proofing times. Aim to catch the dough at its peak rise, just before it collapses or flattens out.
Bake it in a loaf pan instead. A pan gives overproofed or extra-sticky dough the structure it needs (and yes, dough often gets stickier the more overproofed it is). I could have turned this into focaccia, but I had promised bread for an event and needed this loaf to work.
The longer you leave your dough in the refrigerator, the more sour and complex flavors it will develop. You can easily leave a loaf in the refrigerator for 3 days before baking. I've gone as long as 5 days, but you will see some deterioration of the loaf after Day 3.
The second factor is the crust of the bread dehydrating and setting in place. If your dough is underproofed, there will be too much fuel for the yeast left in the bread and it will continue to rise after the crust starts to set. This will lead to tearing in the crust, and you will get a loaf that looks like this.
There are many indicators but the most reliable is to accurately measure the percentage rise in the dough. However, in my experience, the percent rise is temperature dependent. When bulk fermenting at a dough temperature of 80F/28C, I look for a 30-35% rise in the dough.
Simply punch it down gently, reshape it, and let it proof again for the recommended amount of time. In the test kitchen, these steps resulted in bread that tasters found acceptable in both texture and flavor. 1. Using your fingertips, gently punch down the overproofed dough.
Over proofed dough is dough that has bulk fermented too long. You can visually tell if your dough is over proofed when it lacks structure, caves in, is stringy, very sticky, unmanageable, etc.
Overproofed loaves will be flatter with sponge like crumb (still nice and open) crust often detaching from crust.
High starter quantities speed up fermentation and lower quantities slow down fermentation. For example, a recipe with 20% starter may finish bulk fermentation in 5 hours and at 10% starter, it may take 8 hours.
An overfed starter can be too diluted and it will be very watery. Your workers are there, they are just overwhelmed with too much food and water.
A good sourdough bread has a crispy, deeply browned crust, an airy, open, and slightly shiny crumb with irregular holes, and a pleasant, balanced tangy flavor that isn't overwhelmingly sour. Key factors are a strong, active starter, proper fermentation (long and slow), high hydration for chewiness, and a mix of flour, water, and salt, often with techniques like autolyse for better gluten development, resulting in a bread that's light yet moist and keeps well.
Here are the big errors to avoid when working with sourdough.
If your room/dough temp is less than 70F with a starter of 20% or less, then it's probably safe to BF on counter overnight, either shape and bake or shape and fridge the next morning.
If you love simplicity, just set the Proofer to 81°F and know that it will work well for most breads. Sourdough works in a range of 70-85°F (21-30°C). Warmer temps of 85°F (30°C) will help promote acidity in sourdough, while cooler temps of 70-75°F (21-24°C) will favor the yeast and help create milder flavors.
