Only you can see when you mute or unmute someone's story. Go to the Stories section at the top of your Feed. Tap a story from the person or page you'd like to mute. Tap in the top right of their story.
Unfortunately, once you have seen someone's story, there is no way to unsee it. Once you have seen a story, it will remain in your viewing history and cannot be undone.
Step 1: Launch the Facebook application and click on any of the stories. Step 2: While viewing, put the finger on the story right before the story is about to end. Step 3: Quickly swipe right or left and make sure the story doesn't end. This way, Facebook won't register you.
Deactivate Your Instagram
Another safe way to unsee someone's Instagram story after viewing it is by deactivating your Instagram account. Once you view the story, log into your Instagram from a PC browser or mobile browser.

Your watch history is never visible to others on Facebook. However, if you take a specific action related to a video or a Page (example: liking a video), that action may be visible to people on Facebook.
Facebook does not identify those that viewed public stories to others who aren't connected. If you're not friends, it will simply tell that user that people that aren't her friends saw it because it was public. I wouldn't worry about it too much.

The number next to the ? emoji counts how many friends have rewatched your Story, not the total number of times it's been rewatched. The Rewatch Indicator does not show which friends rewatched your story.
Unfortunately, there's know way to see who replayed your story. So, if you see that your views are larger than the list of people, you can assume someone viewed your Story more than once.
