If you decide against learning Avada Kedavra from Sebastian, that's not the last chance you'll get to learn or use the spell. Once you return to the castle, you can visit Sebastian in the Undercroft in the Defence Against the Dark Arts tower, and ask to learn about it.
You can confirm your choice with “Yes please” to learn Avada Kedavra. In case you select options that don't let you learn the curse, you will be given another option in the next quest, In the Shadow of Fate. Ominis Gaunt will present you with the choice of turning Sebastian in.
You can also learn it in the next Sallow relationship quest where you should tell Ominis Gaunt "We must not turn Sebastian in." Speak to Sebastian in the Undercroft after this and he'll teach you any Unforgivable Curses you have missed up to that point, including Avada Kedavra.
You Have Another Chance to Learn Avada Kedavra Temporarily in Hogwarts Legacy at the Dark Arts Battle Arena. The only way to truly learn Avada Kedavra in Hogwarts Legacy requires you to pick it up from Sebastian Swallow, as well as follow a specific path to get here.
In case you missed learning the Cruciatus Curse during the quest, you can visit Sebastian in Undercroft later on in order to learn any Unforgivable Curse from him, including Crucio. Players can add the Cruciatus Curse in their Build in the late game as it is an extremely powerful spell and helps defeat enemies faster.

Once you have opted to not turn him in, and fully completed his quest line, you can head to the Undercroft to learn it from him at any time. That is how you learn the Killing Curse, Avada Kedavra in Hogwarts Legacy.
Just go undercroft and speak to sebastian again, to learn Adava Kedavra. You could've selected the dialogue option that doesn't give you the spell. You need to simp hard to get it.

Because when you intentionally kill someone, you destroy your own soul, then again Dumbledore is in King's Cross station just like fetus Voldemort, so maybe he's there because he actually did kill his sister.

The second dialog choice still has Sebastian cast Crucio on the player, however, players will learn the Unforgivable Curse themselves. The final sees players learn Crucio and use the curse on Sebastian at the same time. There is no true difference between taking Crucio or casting it on Sebastian.
Hogwarts Legacy has three main endings for players to discover in addition to Sebastian's dialogue choices which change how his companion quest line ends. Hogwarts Legacy includes a good ending, a bad one, and a universal final end scene for both "good" or "bad" dialogue pathways.
